We are delighted to announce the promotion of Duncan Millar to the role of Head Chef at our fantastic Gillies Bar & Grill.
Duncan is originally from Ayrshire in Scotland and has 22 years of Chef experience to his name. Duncan began the first 9 years of his career in two of Edinburgh’s top 5 Star hotels, The Sheraton Grand Hotel and The Balmoral. He moved to Northern Ireland 10 years ago to work with Chef Paul Rankin, before taking over as Head Chef in Ballymena’s very popular Grouse Inn.
Duncan lists Peter Gordan, Marco Pierre White and Guy Savoy as some of his favourite chefs in the industry, while taking inspiration from Italian, Spanish and Indian cuisines in his personal cooking.
Duncan has been part of the GIllies team for 3 years now and we are delighted he will be running one of Northern Ireland’s most popular restaurants.
