Tell us about your career so far? 

A lot of my career so far was spent working at coco in Belfast City centre, the food there is excellent and I felt it really shaped me as a chef. I also worked for James Cochrane in London which was a huge eye-opening experience for me. 

 

What do you enjoy most about working for Galgorm Collection? 

I enjoy the fact they are always trying to move the company forward which gives provides me with exciting new challenges as a chef. 

 

What do you enjoy doing when you are not working?

When not working I enjoy playing and watching football and dragging my girlfriend along to whatever match happens to be on.

 

What flavour of ice cream would you be and why?

I would have to be pistachio, a little bit different.

 

What is the strangest thing you’ve ever eaten?

Kangaroo burgers at the Christmas Market, the taste is just like beef! 

 

Pizza or pasta?

I would have had to say pizza but since working at Fratelli I'm a massive fan of our delicious Pastas.

 

Favourite drink?

A perfectly poured pint of Guinness.

 

What food do you dislike?

Anything with liquorice.

 

If you could pick one person to cook for who would it be? 

It would have to be Marco Pierre White if I could handle the criticism!
