Quinoa Salad

Delicious and nutritious, it's what we all strive to create come dinner-time. To provide some inspiration we've enlisted Duncan's tips for delicious and nutritious recipes to see us through weekday dinners. Quinoa; a seed, cooked similar way to rice, can be used in a wide range of dishes. Curries, salads, Granola, served hot or cold.

At Galgorm Resort and Spa we offer a Plant-Based Menu & one of the dishes is Quinoa, Green Beans, Spinach, Avocado, Sunflower seeds and Basil. A lovely light but filling salad that can be served cold or slightly warm.

 

What You Will Need

 

  • 90 gm. quinoa (cooked)
  • Handful of green beans (cooked)
  • 1 avocado (sliced)
  • 100 gm. spinach
  • 8 basil leaves (sliced)
  • 4 tbsp. sunflower (toasted)
  • 100ml olive oil
  • 1 tbsp. lemon juice
  • 1 tbsp. orange juice
  • Salt for seasoning

 


Method

Place all ingredients in a bowl, slightly fold together.
